Disappearing Foods: Encouraging a Comeback

A new book, "Renewing America's Food Traditions" by Gary Paul Nabhan, identifies 93 foods once common in American kitchens but now in danger of disappearing. Some are livestock breeds or varieties of crop plants; others are wild species such as the Carolina flying squirrel. The book organizes the foods by gastronomic regions, which are shown on the map below.

I am impressed with your map of disappearing foods, not only is a it a fascinating topic, but the map itself is a pleasure. However, I am very curious about how you defined the borders of the regions— what data or features or whatever could possibly exist to make such coherent regions?

Hi Martha,

The regions are defined by the author of the book,Gary Paul Nabhan. The map is relatively rough, but still gives an overview of the regions.
